An Incredible Harvest!

An incredible harvest from the veggie garden today. Ken picked while I processed:

14 quarts of green beans pressure canned 

4 quarts of green beans frozen for Instant Pot recipes

6 quarts of cauliflower frozen

1 quart of ‘Fooled You’ peppers diced and frozen

The tomatoes are finally beginning to ripen. They’re not pretty but they are absolutely delicious! This gorgeous head of cabbage will be sauerkraut but it’s going to have to wait until tomorrow...we’re tired! 🙂 Dinner tonight is a grilled mostly grass fed steak from a local family farm served with cucumbers, tomatoes, green beans and a kale salad from our garden. I am in heaven!

Second Saturday!

We’ve been blessed with a beautiful Sunflower harvest! In addition to our freeze-dry technology we use our Sandvac machine to preserve some of our blooms. The flowers are pre-treated, carefully buried in silica gel then placed in the machine under a vacuum with heat. The result is a flower that looks like it’s been freshly picked from the garden! One of today’s projects...’Jade’ green beans! We have 3 quarts fermenting, 7 quarts pressure canned and 2 quarts in the freezer for Instant Pot meals! This variety is prolific! Many more to come!

Malibar Spinach

The Malibar Spinach is going crazy in our veggie garden! Last night we steamed it with some diced onion for zero minutes in the Instant Pot...then tossed it with a little butter, salt, pepper and lime juice. Delicious!

From Farm To Table In So Many Ways!

Fast forward from May 18 to July 3...the veggie garden is thriving! We are currently harvesting Hakurei turnips, onions and kale. The tomatoes and green beans are blooming and the broccoli and cabbage are forming heads. In anticipation of a second harvest, we’ve sown the seeds of Blue Vates Kale, Rubicon Napa Cabbage, Snow Crown Cauliflower and KK Cross Cabbage. We also use this garden space to grow the Big Smile sunflowers that we preserve and use in the arrangements in our gift shop. From our flower farm to the table in so many ways...because life should be beautiful and delicious!

Plumeria

Our Plumeria plants are beginning to bloom and it looks like there will be many more to come! This plant has grown a seed pod. It’s going to be a project that will require a bit of patience. We’ll have to wait a few months for the pod to dry and turn brown then we’ll remove the seeds and plant them. Hopefully we’ll have some Nebraska-born Plumeria plants! I just love all of our little experiments!

Tiny Bubbles

The Latin translation for the word ‘ferment’ is ‘to boil’. This jar of dill pickle spears fermented with garlic, dill, lemon and Bay leaves will be in full fermentation-mode for our Saturday class. When I tip the jar it will literally look like it is boiling! It’s amazing to see all the bacteria hard at work creating healthy probiotic-filled foods to help support our gut health! Our Saturday class is filled but we’ll get another one scheduled soon! Happy Fermenting!

Our First Cucumber! 

Our first cucumber! ‘Jackson Classic’ is a pickling-type cucumber and is perfect for growing in a container! Star Of Bethlehem

About five years ago I discovered these beautiful little Star of Bethlehem plants blooming in the middle of the yard. I carefully moved them into the safety of a garden and enjoy these little heaven-sent blooms each year! We’ve made great progress in the gardens and lots of plants are beginning to bloom! Yankee Doodle

Our ‘Yankee Doodle’ lilac is gorgeous this year! These flowers are destined for the freeze-dry machine. Watch for these beautifully preserved blooms to appear in our designs! It feels so good to be harvesting again after such a long winter! There’s lots of color beginning to appear in the landscape and we’re finally getting some work done in the gardens! Expanded Hours

Thank you to everyone who attended and helped with our Spring Open House! The weather was absolutely beautiful and it was so great to see everybody! By request we’ll be expanding our hours this year! If you missed the Open House we’ll be open every Saturday in May from 9 to 4! Here’s a few of the weekend favorites! We only have two Night Blooming Cereus Orchid Cactus’ left. This plant blooms at night and the flower lasts for only a few hours in the morning. It is stunning! Apple Blossom Rosebud geraniums are an old fashioned favorite. Farfugium has green leaves dappled in yellow. It’s daisy shaped flower adds color and interest to the shade garden. Ice plant loves the sun and heat. It’s a good companion plant to succulents. We have a great variety of those, too! Stop by this Saturday!
